Shaman/occultist (conjurer) will give you a tanky but rather slow pet build, while shaman/necromancer (ritualist) trades some of that tankyness for higher damage. I have a lv 100 conjurer and I am always surprised what she can survive. A vitality caster is also a possibility for the ritualist, though it means giving up on pets eventually.

Pump points into Shaman to max out Wendigo Totem. With gear boosting Vitality/Chaos damage, you can facestomp anything until at least mid-game. Doesn't hurt that both of your attacks are AoE to clear groups before they can even reach you. That combo can reach mid-game without a single health potion used.
