It's often said never multiclass casters, but multiclassing martial classes isn't much better. As for monk specifically, dipping into monk is usually better than dipping out. Good example here is casters dipping for Monk AC. Monk loses a lot by multiclassing. For example, dipping Unchained Rogue 3 levels for dex damage.
